This is just one of those delights that someone suggests and then it seems like the best idea in the whole world. A perfect snack for a weekend morning, or lazy lunchtime, or an evening nibble. Suitable only on days between Monday and Sunday. :)

Ham and Cheese Croissants

For Dubliner cheeeeesy croissants you’ll neeeeeed 4 croissants; 250ml milk; 22g butter; 22g flour; pinch grated nutmeg; salt and white pepper; 100g chopped ham and 150g Dubliner cheese. 

  1. Preheat the oven to 180°C/ Gas mark 4.
  2. Melt the butter in heavy saucepan to form a roux. Whisk in flour and cook until foaming, approx one minute.
  3. Remove pan from heat and let it cool slightly. Add the milk , whisking constantly.
  4. Return sauce to the heat and bring it to the boil, whisking constantly  until the sauce thickens.
  5. Season to taste with nutmeg, salt, pepper, simmer for 2 minutes.
  6. Add the chopped ham and half the cheese to the sauce.
  7. Cut the croissant in half.
  8. Spread the cheese and ham mixture on to the base of the croissant. Sprinkle with the remaining cheese .
  9. Place the croissant on a baking tray.
  10. Bake for appox. 10 minutes
  11. Serve hot with some tomato chutney.

It takes 10 minutes to prepare and 10 minutes to cook. It serves four and is categorised by the EU as officially yum. (Ok, we made the last bit up. But it should be true.)
